Stroganoff

Ingredients
- 1½ lb beef fillet, sirloin or porter-house steak cut into thin strips
- salt and pepper
- 3 tbsp butter
- 2 tbsp flour
- 1 onion sliced
- 1 lb mushrooms sliced
- 1 cup beef broth or bouillon
- 1 tbsp prepared mustard
- 1 cup sour cream
Directions
- Salt and pepper the meat.
- Saute the meat in one tbsp butter.
- Remove meat and saute onions and mushrooms in the same pan.
- Remove onions and mushrooms from pan and add 2 more tbsp of butter and flour, whisking until smooth.
- Add broth to the mixture.
- Heatr and stir until slightly thickened.
- Add the sour cream and mustard and stir over low heat until blended.
- Add meat, onions and mushrooms.
- Serve over noodles or rice
